The East/West knives are our biggest sellers because chefs around the world are quickly switching to these knives for most of their prep work. East/West blades are very thin, sharp, and broad, and are designed to be a cross between a Western cook's knife and an Eastern vegetable chopper. They handle the heavy cook's knife work with ease, but chop faster.
